Job Description:
The successful candidate serves as the department head for culinary operations with duties that include food production for cafés, retail operations and catering functions. Adheres to HACCP guidelines to ensure efficient, safe and sanitary food production, preparation and presentation. Responsible for handling, preparation and storage of perishable products. Duties also include menu development, inventory, purchasing, labor and food cost controls, maintaining sanitation standards, and personnel management to include hiring, coaching, counseling, training and developing. Additional responsibilities include but not limited to the following:
Responsibilities:
Participate in employee meetings and training programs
Conduct safety, sanitation and maintenance programs
Maintain food cost while ensuring quality standards
Maintain an active role in managing team developments
Manage purchasing and inventory controls
Performs related duties and special projects as assigned
Qualifications:
Degree in Culinary Arts is preferred or equivalent professional experience
10-13 years progressive culinary management experience
Must possess at least 7 years in menu development
Self-starter, innovative and ability to multitask
Maintain a positive attitude under pressure and motivate team
Must be knowledgeable on HACCP controls along with proper storage and use of food
Knowledge of budgets, labor costs, inventory controls
Strong leadership, coaching and training skills
Must possess a passion for excellence
Computer skills: proficient in Microsoft Office
Excellent verbal and written communication skills
Ability to lift, bend and carry up to 40 lbs.
Knowledge of safe and sanitary food handling principles
Conformity to the highest standards of personal integrity and ethical behavior
